Boneless Beef Chuck for Beef and Broccoli

DELICIOUS Beef and Broccoli recipe that everyone will love. This flavorful dish is perfect for your next dinner is easy to make too!

We love Asian recipes in our home, and even more so when they are simple! This classic dish is full of flavor and perfect served with some Fried Rice and Egg Rolls.

You may have noticed that our family loves any Asian type recipe. Yes – we're a little obsessed! We recently tried this simple Beef and Broccoli for dinner and everyone loved it.

We've always been long-time fans of combining beef + broccoli and loves the delicious Asian flavor made when adding the sauce and sesame seeds. Serve it over rice or noodles and you're set!

The recipe is also very simple which means this will be a go-to. We ended up blanching the broccoli so it would look more green for the pictures, but you can also omit this step to cut back on time.

Tips for cooking with Beef

Let's talk beef – and specifically for this recipe…

  • What other cuts of beef can I use? Whatever you have on hand will work. For this recipe we used beef chuck roast, the original recipe used round roast. A very common cut people use is flank steak.
  • Did you know? Adding ½ tsp baking soda to beef marinate will help tenderize the beef.
  • A super easy trick to get nice thin slices of beef is to throw your piece of beef in the freezer for about 30-45 minutes. This will stiffen it up enough to cut. Allow it to thaw in the marinade, then cook.

How to Make Beef and Broccoli

BLANCH. Blanch broccoli by bringing a large pot of water to a boil. Once boiling, add the broccoli and cook for 1-2 minutes. Place in cold water, then drain and dry.

BEEF. While water is coming to a boil, whisk together 3 tbsp cornstarch with 3 tbsp water in a large bowl. Add beef and toss in the mixture.

SAUCE. In another bowl, whisk the remaining cornstarch with soy sauce, rice vinegar, brown sugar, garlic, sesame oil and ginger – set aside

COOK. Add 1 tbsp vegetable oil to a large pan and cook on medium heat. Add meat and cook until heated through and pink is gone. Take out meat and set aside

MIX + SERVE. Once broccoli is blanched and done, add 1 tbsp vegetable oil to the pan and cook broccoli for about 2 minutes. Add the beef and the sauce to the pan and bring to a boil. Cook for 1-2 minutes and serve over rice or noodles sprinkled with sesame seeds.

How do I keep the broccoli a bright green? If you want your broccoli to be bright green you'll need to blanch it first, which is what we did in this recipe. To do this:

  1. Boil water in a pan.
  2. Place broccoli florets in the boiling water for 2-3 minutes.
  3. Drain and immediately place in cold water.
  4. Once cool drain and dry the broccoli.

How does the sauce thicken? As the sauce boils the cornstarch will act as a thickening agent.

Freezer Meal + Reheating

Can I make beef and broccoli into a freezer meal? Yes! Don't you love that answer? Simply mix up the sauce. Put the beef and 1 cup of the sauce into a ziploc bag. And place the remainder of the sauce in a separate ziploc.

Put the blanched broccoli florets in a third ziplock. Label each bag and keep in the freezer for up to 6 months. Thaw in the fridge overnight and cook according to the recipe instructions.

What is the best way to reheat leftovers? If you're in a hurry you can use the microwave, but the best way is to use a skillet. Heat up a skillet, add a bit of olive oil, throw in the leftovers and cook until warm.

We love this simple beef broccoli recipe. Add more veggies if you like or keep it as is, but we love it either way!

  • 4 cups broccoli chopped
  • 3 tbsp cornstarch divided
